I'm not saying there's anything profound about this soup... but it's amazing, so I thought I would share:
"OH MY GOODNESS VEGGIE SOUP"
Put some filtered water in a big pot (at least 3 quarts) and let it heat up to boil. While it's heating...
Dice the following, and throw them into the pot:
2 serrano peppers
1 white onion
1 lb bag of carrots
1 bunch of celery
1 bunch of kale (remove stems)
10 brussel sprouts
Let it boil for 2 minutes, then turn it down to simmer for 1 hour with lid on.
Stir in a can of campbells tomato soup and a container of fresh sliced mushrooms, and put the cover back on. Let simmer another 30 minutes.
Add garlic powder, cumin, and pepper. Let cool.
Salt to taste. Serve.
(I add 7 cubes of chicken bullion to mine at the very beginning, but if you are strict vegan or vegetarian, disregard.)
